To say I love to cook would be a bit of an overstatement, although, I do enjoy preparing new meals in the kitchen and seeing how they turn out. I would say I became more adventurous with my cooking and food prep before Liam was born when I was playing around with Paleo and Keto adjustments in my diet and was cooking mainly for myself. Now, cooking for a family and child, my meals are a lot safer and perhaps less adventurous, but I still find some time in the kitchen to experiment.
Being my favourite type of dessert, I’ve been making my crumbles with oats for quite some time now, as it offers a healthier alternative to flours; I usually make apple crumbles. From time to time, out of sheer laziness to slice apples, I may incorporate other fruits such as berries. As I don’t do a lot of baking in general, I don’t often have any baking needs in my pantry so being able to recreate some of my favourite desserts with what I consider to be everyday items in my cupboard is a win.
To create this peach crumble, I literally whipped some ingredients I had in the cupboard together as I was feeling for a sweet treat after dinner. I threw the peaches on the stove and combined the dry ingredients and butter while the broccoli was steaming and the chicken had just made it out of the oven.
If you want a quick, light and tasty sweet treat, then you can follow these simple instructions and enjoy pure bliss in less than 30 mins.
1 can of sliced peaches (I used peaches in light syrup, but heavy syrup will also do)
1 cup rolled oats
3 tbsp softened butter
3/4 cup brown sugar
- Preheat the oven to 150-170 degrees (fan oven).
- Empty peaches into a saucepan and place on medium to low heat until steaming, approximately 10 mins. If using peaches in fruit juice or light syrup, you can add extra sugar to taste if you prefer. Heavy syrup should suffice without the added sugar. Add a sprinkle of cinnamon to the saucepan.
- While the peaches are steaming, place the rolled oats into a food processor or blender to ground into a fine texture almost like flour. If you can source the oats in the finer texture, then this step can be skipped.
- Combine blended oats, brown sugar and cinnamon together in a bowl.
- Soften the butter to a creamy consistency and add to the dry ingredients in the bowl. Its best to add slowly and stir in between to avoid over saturating the oats. The aim is a crumbly, soft biscuit-like texture.
- Remove the peaches from the heat, emptying both fruit and liquid into a baking dish.
- Add the crumble to coat the fruit and filling in the baking dish. You can do this with a spoon, or utensil of choice, however, I like do it by hand as I feel like a better “crumble” and coverage is achieved when it’s sprinkled on top.
- Bake the crumble for about 15 minutes or until the top is toasted to the touch and the base is bubbling.
- Allow to cool before serving. Serve with vanilla ice cream or warm custard.
